Ketogenic Coconut Nut Bars
(from Ketogenic Desserts and Snacks-John Richards)

1 cup almond flour
1 dash salt
1/4 cup melted butter
1/4 cup sugar free maple syrup
1/4 cup shredded coconut
1/2 cup cashews
1/2 tsp. cinnamon
 

**Makes 8 servings

-This is a no-bake bar, so there is no need to pre-heat your oven! Your will need to line a 9"x9" baking dish with parchment paper, however.

-Now, take a medium sized mixing bowl and combine your almond flour and your melted butter. Use a silicone spatula to mix these ingredients together well.

-Once mixed well, add in your maple syrup, cinnamon, and salt and continue to mix until well incorporated.

-Now, mix in your shredded coconut.

-Once your coconut is mixed in, chop up your cashews in to small pieces before mixing them in to your ingredients bowl. When everything is well mixed, mold it in to your baking dish. If desired, you can add more coconut or cinnamon on top of your bars.

-Put your baking dish in to the refrigerator and let your bars chill completely for at least two hours before slicing in to 8 pieces to serve.
