Chilled Watermelon Gelatin

If you shy away from serving watermelon because of the potential mess, look no further.  This delicious fruit gelatin will have you and your family enjoying this classic summertime fruit without the hassle or mess of slurping it from the rind

Prep Time: 15 min
Chill Time: 1 hour, 55 minutes

Serves 8

1 pkg. (6 oz.) strawberry gelatin 
1 cup boiling water
1 cup cold water
3 cups chopped watermelon (seeds removed)
1 can (8oz) crushed pineapple in juice
 
1-1/4 cups coarsely chopped pecans, divided (optional)
1 pkg. (8oz) cream cheese,
    (softened)
1/4 cup milk
1/4 cup granulated sugar
4 oz whipped topping

-Combine gelatin & boiling water in a medium heatproof bowl
-Stir until gelatin is dissolved, about 2 minutes
-Add cold water & mix well
-Chill until partially set, about 55 minutes

-Add watermelon, undrained pineapple & 1 cup pecans to gelatin mixture & mix well
-Spoon into a 13x9-inch dish
-Chill until set, about 1 hour

-Place cream cheese in a medium bowl
-Beat with an electric mixer set at high speed until light & fluffy
-Add milk & sugar to cream cheese & beat until the mixture is smooth
-Fold whipped topping into cream cheese mixture
-Spread evenly over gelatin mixture
-Sprinkle with remaining pecans

-Chill until serving time
