Ketogenic Spice Cupckes
(from Ketogenic Desserts and Snacks-John Richards)

2 cups almond flour
2 tsp. baking powder
4 eggs
1/2 cup salted butter
1 tsp. vanilla extract
5 tbsp. water
1/2 tsp. cinnamon
1/2 tsp. allspice
1/2 tsp. nutmeg
1/4 tsp. ground clove
1/2 tsp. ginger
3/4 cup erythritol
 

**Makes 12 servings

-Preheat oven to 350*F. While your oven preheats, fill a cupcake tray with cupcake liners.

-Now, in a large mixing bowl, combine 1/2 cup butter and 3/4 cup erythritol. Use your hand mixer to mix them together until you get a smooth consistency.

-Crack in two eggs and add your vanilla. Mix again with your hand mixer. Once smooth, add the rest of your eggs and mix again.

-Once you have mixed in all four eggs, grind your clove down using a mortar and pestle. Once you get a fine powder, add it, along with all of your spices, to your bowl. Throw in your baking powder and mix well.

-Add your almond flour in to your bowl and mix.

-Add water to the bowl and mix again.

-Spoon your batter in to your cupcake liners and bake in your preheated oven for 15 minutes or until cooked through.
