Ketogenic Holiday Ice Cream
(from Ketogenic Desserts and Snacks-John Richards)

1 pint heavy cream
2 tbsp. dark chocolate chips
1.8 oz shredded unsweet coconut
1.8 oz. chopped strawberries
2 tbsp. Stevia
 

**Makes 8 servings

-Begin by adding your Stevia and cream to a medium mixing bowl and whisking them together to get a consistent mixture.

-Using a silicone spatula, now fold in your dark chocolate chips, strawberries, and coconut.

-Once well combined, pour your ingredients in to a bowl and cover. Put the bowl in the freezer and let it freeze overnight.

-When ready to eat, sit your bowl in some warm water for just a few minutes to loosen up your ice cream from the bowl and then serve.
