Ketogenic Butterscotch Ice Cream
(from Ketogenic Desserts and Snacks-John Richards)

1 cup coconut milk
3 tbsp. butter
1 tsp. sea salt
1/4 cup heavy cream
1.4 cup sour cream
25 drops liquid sweetener
2 tbsp. vodka
2 tbsp. erythritol
2 tsp. butterscotch flavor/extract
1 tsp. xanthan gum
 

**Makes 3 servings

-In a large mixing bowl, combine your vodka, sour cream, butterscotch flavoring, coconut milk, heavy cream, salt, sweetener, and xanthan gum. Use your immersion blender to mix together well.

-Now, add your butter to a saucepan and on low heat, brown it until caramel color.

-Once your butter is browned, add it to your blended ingredients and blend it again.

-Add your thoroughly blended mixture to your ice cream machine and follow the instructions for your ice cream machine to make your ice cream!
