Katrina's Cookbook


German Chocolate Cake

2 cups sifted cake flour
1 2/3 cups sugar
1 1/2 tsp baking soda
1 tsp salt
1/2 tsp baking powder
1 cup Crisco
2 squares (1oz.ea)
  semi-sweet chocolate
2/3 cup milk
3 eggs
2/3 cup milk
1 tsp vanilla

-Preheat oven to 350*

-Combine dry ingredients in mixing bowl
-Add Crisco, melted chocolate, & 2/3 cup milk
-Blend for 30 seconds

-Beat with mixer at medium speed for 2 minutes

-Add eggs, remainder of milk & vanilla
-Beat 2 minutes

-Spread in 2 (9x1 1/2in) cake pans

-Bake at 350* for 30 to 35 minutes 


Coconut Pecan Frosting

1 cup evaporated milk or heavy cream
1 cup sugar
3 egg yolks, slightly beaten
1/2 cup butter or margarine
1 tsp vanilla
1 1/3 cup shredded coconut
1 cup chopped pecans

-Combine milk, eggs, sugar, butter & vanilla in a saucepan
-Cook & stir over medium heat until mixture thickens (about 12 mins)
-Remove from heat
-Add coconut & pecans

-Let cook to spreading consistency beating occasionally
