Ketogenic Peanut Butter Cookies
(from Ketogenic Desserts and Snacks-John Richards)

1/3 cup coconut flour
1/4 cup flaxseed meal
1 tbsp. heaving whipping cream
1/2 cup natural creamy peanut butter
1/3 cup erythritol
1 tsp. baking powder
1/4 tsp. baking soda
5 tbsp. salted butter
1 egg


**Makes 18 servings

-Preheat oven to 350*F. While your oven preheats, cover a large cookie sheet with parchment paper.

-In a large mixing bowl, mix together your heavy cream, butter, and peanut butter until combined. Then combine your baking powder, baking soda, coconut flour, eryghritol, and flax seed meal in to this mixture. Stir to disperse your ingredients.

-Crack your egg in to your ingredients and mix thoroughly. Once mixed, take your dough and make 18 rounded cookie balls. Place them on your cookie sheet and press down gently.

-Bake your cookies for 15 minutes until done.
