Ketogenic Chcolate Coconut Cookies
(from Ketogenic Desserts and Snacks-John Richards)

1 cup almond flour
2 eggs (unchilled)
1/2 tsp. baking powder
1/3 cup unsweet shredded coconut
1/4 cup cocoa powder
1/4 cup coconut oil3 tbsp. coconut flour
1/3 cup erythritol
1/4 tsp. salt
1 tsp. vanilla extract

**Makes 20 servings

-Preheat oven to 350*F.
-Line a large cookie sheet with parchment paper.

-In a medium sized mixing bowl, combine your dry ingredients together and mix well using your hand mixer.

-In a separate bowl, combine all of your wet ingredients together an dmix well using your hand mixer.

-Slowly add your wet ingredient mixture to your dry ingredient mixture while mixing until all of your ingredients are combined.

-Break off small pieces of your dough and roll them in to small cookie balls. You should be able to get around 20 balls out of your bowl of dough. Set each of your cookie balls on to your parchment covered sheet

-Bake your cookies in your preheated oven for 15 to 20 minutes or until cooked through.
